Galician Pork Knuckle or Pork Hock

In this Spain From The Cuisine article, we are going to see one of the most traditional recipes of Spanish cuisine, specifically Galician cuisine, the Galician pork knuckle. A very simple recipe, full of flavor and tradition within spanish cuisine. Specifically within galician cuisine, although it is currently so widespread that it can be enjoyed almost anywhere in spain.

In addition to being a very tasty recipe, it is a tremendously healthy recipe, but it depends on how it is made. Today here, we will see a very healthy way of preparing it, and that everyone can enjoy it in a healthy way, but full of tradition within Spanish cuisine.

Galician pork knuckle is a recipe with a lot of tradition, it is very simple to make and you will always succeed with your visits.

It should be noted that it is a similar recipe to German-style pork knuckle, but it is not the same. Among other things, in the Galician style we do not use the oven. We start.

Step 1: Prepare the pressure cooker

Once this is done, add the pork knuckle and add salt to taste. It is important to indicate that if the knuckle was preserved in brine, we regulate the amount of salt so that it does not remain salty. This dish is intense in flavor and if we go too salty, it will become an inedible dish.

Then, add the bay leaves, approximately 4-5, and also add a handful of black peppercorns. If you like pepper a lot you can add a little more and if you don’t like it, there is no problem if you don’t add pepper.

It is time to add the carrots, to taste, peeled and well cleaned. I usually cut them in half. In addition, we add the whole onion, but without the skin and well washed to remove impurities.

Once all this is done, it is time to close the pressure cooker and serve ourselves a coffee, since we must wait a long time.

Step 2: Wait, wait and wait

At this step, we must wait. But how long? Well, it depends on the type of espresso pot, it depends on the size of the pork knuckle and it depends on how tender we like the pork knuckle.

In my case, with a 600-gram pork knuckle and my pressure cooker, I had to wait almost 1.5 hours. Also keep in mind that I particularly like the meat to be very tender and to come off the bone very easily.

It is also possible to use a normal pot, but the waiting time can be more than 2.5 or 3 hours.

Step 3: Open the pressure cooker

In this step, we are going to open the pressure cooker very carefully and following the manufacturer’s recommendations. In general, we must turn off the heat and wait for all the steam contained in the pot to come out.

After this, we must add the potatoes. I particularly like short potatoes in large chunks. More or less by half if the potatoes are not excessively large.

Step 4: Close the pressure cooker and open, again

Once with the potatoes inside the pot, we close it again and turn on the fire. We must wait about 10-15 minutes until the potatoes are well cooked.

After those 10-15 minutes, we open the pressure cooker again, and move on to the next step, which is the best and most fun.

Step 5: Finish the Galician Pork Knuckle

It is the best moment of the Spanish recipe. It is time to plate our Galician knuckle. Ideally, you should choose a flat and large plate, but with a little bottom to be able to add some sauce. This will give the recipe more juiciness.

In the dish you must add the knuckle, the potatoes, the carrots and, as we have said, some sauce, to be able to soak each of the bites that we are giving to this famous traditional recipe of Spanish cuisine.
