Garlic Rabbit or Rabbit with Garlic

Garlic rabbit, one of the most traditional and most used recipes in Spanish cuisine. It is widely used as a dish on the menus of any Spanish house, but it is also widely used as a tapa. Widely used in bars and restaurants to accompany while you have a drink.
It is a very tasty and very simple recipe to make, as well as being very cheap and healthy. If that’s okay with you, I will present the ingredients, for 4 people and we will start cooking.
- 500-600 g. Rabbit
- 6-7 cloves of Garlic
- Olive Oil
- Salt
- 200 ml. White Wine
- Black Pepper (Optional)
- Parsley
Recipe Elaboration
Something that we must take into account is that depending on the pan, its depth and the amount of garlic rabbit that we are going to make, the amount in the ingredients may vary. The most appropriate thing is to check the quantities and if you have any doubts, ask us.
Step 1: Fry the Rabbit
The first step we must take is to put a pan on the fire and add olive oil. The amount depends on the size of the pan and the amount of garlic rabbit that you are going to make.
When the pan has enough oil to almost cover the rabbit, add the chopped rabbit to the pan. We must stir the rabbit from time to time, so that it does not burn and it fries evenly. Now we add salt and black pepper to taste.
When we see that the rabbit begins to change color towards gold, we will be finishing this first step of our authentic Spanish recipe. Depending on the amount of rabbit used, this process can take about 10 minutes.
Step 2: Fry the Garlic
Once we have the golden rabbit, but without being completely fried, it is time to introduce the garlic cloves into the pan. In my case, I prefer to add them cut into two or three for each clove of garlic. But you can throw them whole or cut into sheets. Even I myself have eaten rabbit with garlic with very finely chopped garlic.
During this step we must be very careful, since the garlic can burn very quickly. The ideal is to lower the intensity of the fire a little so that they are made slowly.
Now we add parsley to taste. It is better to chop the fresh parsley, as it will give the garlic rabbit more aroma. But if you don’t have any, as is usually my case, you can use dry chopped parsley, which you can find in any supermarket or store.
When the garlic is golden in color, it is time to move on to the next step, immediately, before it burns.
Remember, burnt garlic can make a dish bitter and destroy it.
Step 3: Don't forget to stir from time to time
That said, do not forget to stir the rabbit, with the garlic and chopped parsley from time to time. It is very important that everything cooks evenly. This way we will have an incredible garlic rabbit.
Step 4: Add White Wine
When the rabbit and the garlic are well browned, without burning and after having also added the chopped bay leaf, it is time to add the white wine. For the measurements indicated in this Spanish recipe, it is approximately a glass of white wine.
Now you must have a little patience, since you must leave the rabbit with the garlic and white wine for a few minutes. It is necessary for the white wine to evaporate the alcohol and the sauce to reduce. But be careful, that the sauce is not reduced too much, since that is what will make you lick your fingers and you will need bread to accompany this delicious recipe of Spanish cuisine.
Step 5: Finish the Garlic Rabbit
When the sauce reaches the thickness, and the desired amount, it is time to finish the recipe, that is, we are going to remove the rabbit and the garlic to a plate, pouring the sauce over the rabbit so that it collects part of it.
As you may have noticed throughout the preparation, the kitchen will be filled with an incredible smell, so I recommend that you be careful when you go to try it. I’m sure you won’t be able to wait for it to cool down, so you’ll get burned.
