Today we are going to learn how to cook one of the most typical recipes of Spanish cuisine, the authentic recipe of Spanish omelette.

The Spanish omelette is a recipe with a long tradition in all the country. You can find Spanish omelette anywhere you visit in Spain. As the story goes, the authentic Spanish omelette recipe was invented in Navarra in 1835. But later it was discovered that this recipe was already being made in Extremadura in 1798. Regardless of this, and as I have told you, you can find Spanish omelette anywhere in Spain.

It is a very simple recipe, with only 4 or 5 ingredients. Later we will explain why this difference, and very simple to make, but very, very tasty and nutritious. If you think so, we are going to start by explaining the ingredients of this recipe, for 4 people more or less. Let’s go !!

The first thing we must decide is if we want to make the Spanish omelette, with onion or without onion. In my opinion, with onion it will be more flavorful and juicy, since the onion releases its own juice and makes it juicier. In any case, to taste the colors, since there are many people who prefer the Spanish omelette without onion. So the best thing is that you try both ways and decide for yourself how you like it better.

In this case I am going to make it with onion. But if you decide to make it with onion, skip that step of the recipe and that’s it.

Step 1: Cut and fry the potatoes and onion

Peel and wash the potatoes with water to remove any traces of sand and dirt. After this, we must cut the potatoes into pieces that are not too large and all approximately the same, in this way all the potato pieces will cook evenly.

We put the cut potatoes in a pan with plenty of olive oil and turn on the fire. With a medium intensity, although it depends on what type of fire you use. Now, we have to add salt to taste.

While the potatoes are frying, cut the onion into cubes, not too small in size, although it depends on your taste, but all of a similar size, so there will be no pieces that can burn and others that are raw.

When the potatoes start to turn golden, it’s the perfect time to add the chopped onion. Be very careful now with the intensity of the fire. If it is too high, the onion can burn and the Spanish omelette can be spoiled.

It is very, very important that both the potatoes and the onion are very well cooked, to the point of almost confitting, since there is nothing I like less than a Spanish omelette with half-cooked potatoes or onions. So it is important to have a little patience in this step.

Tip: The perfect time to remove the mixture from the potatoes with the onion is when you can effortlessly split the potatoes with a spoon or fork and the onion has become transparent.

Step 2: Mix with the eggs

Now it’s time to beat the eggs. To do this, in a deep bowl, beat all the eggs and add salt to taste. Not too much, since now we will pour the potatoes and onion that we have prepared in the previous step, which already had a little salt.

When the eggs are well beaten, carefully add the potato and onion mixture and mix evenly.

Step 3: Curdle the Spanish omelette

To start this step, we must put the pan back on the fire and wait for it to be a little hot. When the pan is ready, add the mixture of potatoes, onion and the beaten eggs that we have prepared in the previous step.

With a long and preferably wooden spoon, we are placing the mixture evenly, so that there are no gaps without potatoes, or without egg. In this way, the spanish omelette will be uniform everywhere. In addition, we will take the opportunity to place the edges correctly with the spoon, so that the bottom of the Spanish omelette is created.

We must wait approximately 3-4 minutes, depending on the size of the tortilla.

Step 4: Flip the Spanish omelette

This is the most critical and dangerous moment of the recipe. It is time to flip the Spanish omelette. So that it can be cooked on the other side. We must be very careful, since it is easy for us to drop the omelette and burn our hands.

To carry out this step, we must take a flat plate, larger than the size of the pan and place it right on top. When it is placed correctly and we have made sure that all parts of the pan are covered by the plate. We must take the pan with one hand and the other hand we put it on top of the plate so that when we turn it the omelette does not fall and we burn the hands.

When we are ready, energetically and quickly, turn the plate and the pan at the same time and without separating them. In this way, the Spanish tortilla will remain on the plate and the pan will be empty.

Another option is to use a special pan for Spanish omelette. These types of tortillas have two joined pans to be able to turn the omelette without having to use a plate and without the danger of burning yourself. In the links that you can see on the right you will find some examples.

Step 5: Finish the Spanish omelette

To finish, we must put the pan back on the fire and pour the omelette that has remained on the plate, in this way, it will be possible to finish cooking on the side that was raw. To carry out this step, we can help ourselves with the wooden spoon that we have used previously.

Once this is done, we just have to wait another 3-4 minutes for the Spanish omelette to be finished.

An important issue is finding the point of the tortilla. If we like it more curdled, we must leave it 1-2 more minutes on the fire and if we like it with less curdled egg, that is, more liquid, we must leave it in the pan for less time.

When it is ready to our liking, we take the tortilla out of the pan and move on to the last and best step of the Spanish tortilla recipe, eating it, perhaps with a little bread.
